With our current salmonella scare, the fingers of blame point in many directions—inadequate inspections, outdated regulations, weak enforcement mechanisms, contaminated feed, and problems in processing. Some make the case that our large-scale industrial food processing has reached a tipping point, giving us some major food safety problems to resolve.

Farmers markets offer another choice—eggs produced by hens doing what they were meant to do—strutting around in the fresh air and sunshine and contentedly laying eggs. Market eggs are healthier for you too.
